Orange Creamsicle Chia Pudding

Chia seeds have a mild taste, so when you add bold flavors, like orange and vanilla, they really stand out.

YOU'LL NEED

21 ⁄2 cups (625 mL) nonfat milk 10 tbsp (185 mL) chia seeds 21 ⁄2 tsp (7 mL) stevia honey blend (such as Truvia Nectar) 11 ⁄4 tsp (6 mL) vanilla extract Zest of 1 orange Juice of 2 oranges Five 8-oz (250 mL) glass jars with lids

HOW TO MAKE IT

Step 1

Into each of five glass jars, add 1 ⁄2 cup (125 mL) of the milk, 2 tbsp (30 mL) of the chia seeds, 1 ⁄2 tsp (2 mL) of the stevia honey blend and 1 ⁄4 tsp (1 mL) of the vanilla. Stir to combine.

Step 2

In a small bowl, mix the orange juice and zest. Divide the mixture evenly among the five jars and stir to combine.

TO STORE

Cover the jars and refrigerate overnight or up to 5 days.

TO SERVE

Enjoy cold.

TIP

To make this dairy-free, use unflavored soy milk instead of nonfat milk.
